Potato Soup with Andouille Sausage

I have a very strong love for potatoes. I’ll eat them just about any way you can think of, that is except for tater tots. I never could like them, although that may be somehow connected to bad memories of school lunches. Anyway, of the many ways I love potatoes, potato soup is pretty high on the list.
A friend gave me his recipe for this potato soup. While his recipe has regular pork sausage, I decided to use andouille, a spicy Cajun sausage. Quinn lived in Louisiana for a few years and really came to love the food there. He introduced me to this sausage, and I immediately loved it.
We really liked this soup. It was a simple, quick meal that was very filling. With a couple of pieces of cheese toast, a bowl of this soup certainly makes a satisfying meal.

This was so good, I made it today, and was scared it was just going to taste like really rich condensed soup so I was a bit skeptical, but made it anyhow and it was great!
